Last night I went over to my sisters place, we had planned to make some pumpkin muffins. We used a recipe by Ellie Krieger from the Food Network. It had 5 star reviews and people were raving about how great they were, how flavorful, amazingly delicious and on and on. We were expecting quite a bit from them based on the reviews.

The sad flat ones were the first batch in the oven. When we checked them halfway through the baking time, they were still very liquidy. Then we realized the oven had been set to 300F not 400F. My fault. I’ve never used that oven before and somehow set it wrong…So for the next batch, they rose but still looked strange. The last batch rose really nicely as you can see.
But the texture just isn’t the normal muffin or cake-like texture. I don’t know how to describe it. It’s moist, which is good, but it’s almost too moist, they’re also dense. They’re kind of spongy! I don’t like spongy. Lastly, they are not amazingly flavorful or delicious. If I were to make this again, there would be more spices going into it for one thing. But I have no plans of making this recipe again.
